Can be done on grill with teflon coated grill plate or oiled grill top (wipe on with paper towel after heating).
In large bowl, combine the turkey, zucchini, carrot, garlic, thyme, salt, pepper, and egg. Form the mixture into 4 balls and squash into patties on bread crumb sprinkled surface. Store on rack in refrigerator to allow liquid to drain and retain shape.
Heat 1 Tbsp of the oil in a large skillet over medium heat. Cook the patties, turning once, until no trace of pink remains, 4 -5 min. per side.
Serve on hamburger buns or thick crusty bread brushed with olive oil and browned in broiler. Top with lettuce and tomato.
For optional flavored mayo mix the lemon juice and mayonnaise in small bowl.
