====== Sauteed Vegetables Pita ====== * 2 Tbsp olive oil * 1 onion - chopped * 2 garlic cloves - diced * 1/2 cup mushrooms - sliced * 2 carrots - peeled and diced * 1 potatoe - peeled and diced * 2 cups broccoli - chopped * 1 small eggplant - peeled and diced * 1 green bell pepper - cored and diced * 1 cup frozen corn * sauce - alternative - roasted garlic peanut, salsa, etc. * 1 cup shredded cheese - alternative - cheddar, mozzarella, goat, etc. * 8 pita halves or tortillas \\ - Any combination of vegetables may be used. Sauce and cheese are optional. - Heat oil in large nonstick skillet. Sautee onion and garlic until lightly browned. - If using mushrooms sautee until release juice. - Add and sautee hard vegetables - carrot, potatoe - Add and sautee medium vegetables - broccoli, eggplant - Add and sautee soft vegetables - bell pepper, frozen corn - If using sauce add and stir. - If using cheese add and stir. - Spoon into pita halves or tortillas to serve. \\ Serves: 8 Total cook time: 15 min. \\ \\ {{tag>food vegetarian}}
